Sushi and maki
During my last stay in Tokyo, my friend Ryo took me (and Aurore) to a real sushi bar. It was so nice and amazing (you eat with your fingers!). This king of restaurants is the one where you just can seat around the counter, and can see the sushi chef is preparing the sushi, the one where there are just about 10 people at a time, the one where you finish you meal in 15 minutes max. but the one you remember all you life.
The sushi chef prepares for you a set of 10 - 12 sushi and maki just in front of you, never twice the same, and going crescendo, and depending of the fishing of the day.
If you want to have an idea of this kind of restaurant, you have to watch the famous documentary of "Jiro dreams of sushi", the most popular and the best sushi chef in the world.
