I'm back to Paris after a few holidays in the south of France and back to work. I usually prepare a meal for lunch to bring with me the days I'm working because in the neighborhood of my office there are not very good things to find.
It's not the same everyday but most of the base is quite the same and quite simple.
I prepare zucchini with onions and olive oil. Then I prepare quinoa or brown rice or couscous seed or lentils or a mix of few of them. Then I add avocado or tomato or beetroot, feta cheese or mozzarella or Parmesan, a drop of balsamic vinegar and olive oil and few sunflowers seeds or pine seeds, goji berries.
For this one it was zucchini with quinoa and lentils, avocado, Parmesan, sunflowers seeds and goji berry.
