Salmon with sorrel
That's been a long time we want to try the well known recipe of one of the most famous restaurant in France (in Roanne): salmon with sorrel from Troisgros. This recipe is served in the restaurant since 1963, when it was invented. And from father to son, the recipe is still the same and a lot of people from all around the world come to eat this legendary dish.
It's not difficult, the problem is to find sorrel. The rest of the ingredients are easy to find:
- 20 cl cream
- 1/2 lemon
- 10 cl fish broth
- 70g shallot
- 200g sorrel
- 125g butter
- 20 cl white wine
- 6 nice salmon tenderloin
Cut the shallot in small pieces and cook them with the wine. Then add the cream and let the sauce reduce.
Add the sorrel and butter and reduce again. Add salt and pepper. Then the lemon.
Cook the salmon.
You can also add spinach in the sauce.
Put the sauce in a nice plate, put the salmon.
