In winter, in the stores in Paris, you can find a lot of exotic fruits. The one idea to make a coconut tart was perfect.
It's very simple.
Add 100g of flour, 25g of almonds or hazelnuts in powder, 50g of butter, a drop of salt, eventually a little bit of water and mix to make the bottom of the tart. Roll it in a mold.
Then, add 100g of grated coconut, 40g of brown sugar, 2 eggs, 10cl of cream and 100g of ricotta. Mix them all together.
Flip this on the bottom. Cook in a hot oven (180) during 20-30 minutes.
And because I love coconut, I also made coconut rocks, nothing more simple: just add 200g of coconut, 60g of sugar and 2 whites of egg.
Mix, make and make small balls. Cook for 6-7 minutes!
