Radish tops soup

Radish tops soup

Nothing better than a hot soup when it’s cold outside. And this one is very simple, except if you add homemade quenelles - Gentiane’s recipe here).

For 2 people you need:

- 1 bunch of radishes (eat the radishes, keep 2 for decoration, and of course the top)

- 1 potato

- 1 onion

- 2 big spoons of olive oil

- salt and peper

- 2 quenelles if you want

Cut the onion and cook it with the olive oil. Add the potato cut in big pieces, and the radish tops. Add 600-800 ml of water. Let cook until the potato is done.

Mix all into a nice green soup. Add salt and pepper. If you want to add quenelles, cut them in nice slices and keep the soup hot until the quenelles became bigger.

Cut the 2 radishes in thin slices. Put them on the top of the soup.

Bon appetit!
