Salmon cheesecake

Every one at home like cheesecake, and every one like salmon. The idea to make a salmon cheesecake was so natural. 
It's not more difficult than a regular cheesecake, and the result is perfect. 

For 4-6 people you need:
- 6 slices of good smoked salmon (organic or wild)
- 100g of Tuc or Ritz biscuits
- 50 g of butter
- 1 lemon
- 200 g of fromage blanc (or yogurt)
- 150 g of philadelphia
- 2 eggs (just the white)
- 3 slices of gelatine (or agar agar)
- pepper and salt

You crush the ritz and add the butter molten. You put this mix in the bottom of 6 circles to make invidual portions. 

You put the gelatine in cold water, and during this time, you mix the philadelphia, the fromage blanc, pepper, salt, zest of lemon, et juice of lemon. Then, put the gelatine with a spoon of this mixt in a pan, just to melt them. Add to the mix, and then add the white egg betten. 

Put this mix in the circles. Then in the fridge for 3-4 hours.

When it's time to eat the salmon cheesecake, unmold the circle, and put on the top the slice of salmon.
